Chef Franckelie, his friends and LALA's 2nd year of taking over
This event built around the people who actually cook with Franckelie — the ones who show up, stay late, and know the kitchen the way a regular knows the dining room.
From 7 to 11 October, that circle is at LALA.
The week also marks two years since Chef Franckelie and Michael took over the old La Brasserie and turned it into the house it is now. Chloe How and Jacky Chan, who hold the kitchen together every service, will cook throughout beside Franckelie and the visiting friends.
Wednesday 7 October — Dinner
Julien Tongourian of Robuchon au Dôme Macau and L’Atelier de Joël Robuchon Hong Kong, Joris Rousseau, Natalie Leung of Valrhona Hong Kong, and Christophe Paucod of Lugdunum Bouchon Lyonnais, Tokyo.
A 4-course sharing menu. HKD 1,588 per person.
Thursday 8 October — Dinner
Guillaume Galliot of Caprice Hong Kong, Giovanni Galeota of Marmo Bistro Hong Kong, Fabian Altabert of Rosewood Hong Kong, Gaël Etrillard of Les Vergers Boiron Hong Kong, and Christophe Paucod again.
A 4-course sharing menu. HKD 1,588 per person.
Friday 9 October — Drinks
The room turns toward the glass. Liber Wines will pour Billecart-Salmon Champagne. Vines & Terroirs will look after the bar, the spirits and the cocktails with Maxime Bernard.
Saturday 10 & Sunday 11 October — Brunch & dessert
Lionel Bodros, chef-owner of Pâtisserie Millefeuille and formerly of L’Atelier Robuchon, joins Chef Jacky for a special dessert programme alongside the weekend brunch menu.
